The technical definition is a wine that has more than 30 grams per litre of residual sugar in it. If a wine has less than 10 grams per litre it is considered ‘dry’. Wines in-between are considered ‘off-dry’. In reality, Sauternes and Tokaji wines are around 120 g/l RS, port is always around 100g/l RS and Auslese 90 g/l RS. Several factors can influence the sugar level in the final wine: Riper grapes - the riper the grapes the more natural sugar content they have. German wines are classified by their natural sugar levels (from Kabinett through to Trockenbeerenauslese). Eiswein is made from grapes left to freeze on the vine. Botrytised wines are made from grapes that develop ‘noble rot’, a desirable infection that occurs under specific conditions; examples being Sauternes and Tokaji. Port, Sherry, Madeira and Vins Doux Naturels are fortified with grape spirit and will always have a higher alcohol content than non-fortified sweet wines (Fino around 15% ABV and Port around 20% ABV). Whichever technique a winemaker chooses, it is imperative that only the healthy grapes with a good level of acidity are selected, to ensure that the alcohol and sugar is in balance with the fruit. If these are not in balance, the wine will feel cloying. The best sweet wines are dangerously morish with a bright, lifted finish laving you reaching for another glass.

Melnik is a hybrid variety unique to Bulgaria, a cross of Broad-leafed Melnik and French Valdeguié. It grows almost exclusively in Southwestern Bulgaria’s Struma Valley. Aromatically reminiscent of an LBV port, this is an intense, concentrated red late harvest with flavours of strawberry, blackberry, black pepper and plum. Mouth coating, with good balance, enjoy this alongside hearty desserts, chocolates or strong blue cheese.
