A rich Mezcal made from two species of agave: agave Cupreata brings mature fruit aromas, while agave Cenizo brings more herbal notes. The agave has been cooked using an age-old traditional method from this region, in an underground stone pit using black oak. It is then fermented in underground tanks lined with pine wood which adds to the herbal character. It is then distilled using the Phillipino method, which predates copper-pot distillation. This technique requires the body of the still to be made from wood, with the alcohol vapours condensed by a copper pot full of water that sits at the top of the trunk. This process adds to the unique character of Derrumbes Michoacan, which after distillation is 46% ABV and is rested in large glass bottles before the final bottling.

TASTE & AROMA PROFILE: Smoky, Fruity, Agave
METHOD: Combine in a glass with ice 30 ml Tequila Reposado with 20 ml Mezcal, 1 tsp Agave Nectar or Super Syrup, 2 dashes of Angostura Bitters. Stir until well chilled and serve with an orange peel garnish
