Yalovo is a small boutique winery named after the village of Yalovo situated in the foothills of Stara Planina. Housed in a large stone building built in the early 20th century it was converted to its present state from 2014 onwards.
Currently, Anton Tanev and Dimitar Dimov’s buy-in fruit by carefully selecting the best from the very best plots available but they are also in the process of expanding their own vineyards, in particular showcasing local varieties: first parcels have already been planted to Dimyat, Pamid, Gamza, Rubin and Chardonnay (this last admittedly not native), yet in addition are looking to revive the forgotten Kokorko, Vinenka and Varna Mavrud. And so too ancestral cultivation techniques associated with them such as narrow rows of 1.7m to a density of 653 vines per acre.
Dimitar is very passionate about Sparkling wines and using techniques learned during time spent in the Champagne region is producing exciting fizz indeed!
The passion shown here extends to the rehabilitation of regional biodiversity, another important Yalovo tenet, where what was once lost can be enjoyed anew.
