One of Bulgaria’s most famous wineries that has achieved cult status, Borovitza is located among the Belogradchik rocks, near the village of the same name, an area that has seen winemaking since antiquity.

With soils composed of 240-million-year-old red sandstone, vineyards situated 3 km deep into the mountains, located on a southern slope with a north-south orientation and a mixed varietal composition – so much so even the owners cannot identify some vines – Borovitza is quite unique.

In 2005, Ognyan Tzvetanov and Adriana Srebrinova bought the winery, carried out a zonal study to establish best varieties to be planted and decided on Gamza, Dimyat, Marsanne, Roussane, Gamay Noir, Cabernet Franc, Sauvignon Blanc, Viognier and Chardonnay.

The winery mainly focuses on extremely limited wine releases – circa 250-400bts only per cuvee – that are highly terroir-driven across all types including red, white and rosé. The philosophy stays true to nature and sustainability in the crafting of wines with exceptional character.

Borovitza also produces tiny batches of the original Ognyan Tzvetanov Premiere Cuvée natural sparkling wine.  This, as the region lends itself especially well to fizz: a hilly landscape, suitable soils and, above all, a temperature differential between warm days and cool nights that ensures a vein of acidity & minerality runs through these perfectly balanced wines.

Although small, Borovitza produces over 25 different wines as they have such an extraordinary array of microclimates, courtesy of their varied mountain ridges.
